Description
Government leader of the City Home Bureas Mrs. Ruby Green Smith spoke on 'The Home Bureau', (which is an outgrowth of the Thrift Kitchen) at the Twentieth Century Club of Buffalo. Dr. Green Smith was a leader in organizing food bureaus, later called home bureaus to aid the Federal Food Administration in conserving and processing essential food products. Eventually she became Professor Emeritus of Home Economics at Cornell University and was associated with the Cornell Cooperative Extension for nearly 30 years.
