This picture is a firsthand record of the products that were offered and produced during the time period. Cheese appeared to be one of the main dairy products of the time.
A dairy exhibit displays rows of cheese wheels and blocks arranged on tiered wooden shelves. Labels and signs identify different varieties, with some cheeses wrapped in netting and others stacked in large rounds. Signs marked “New York Cheese” and other brand names are visible among the displays.
